I haven't cooked in a long time, but today the Orbitals came so that Daye could do their hair with highlights and we couldn't decide what to eat, so I volunteered to find us a meal worthy of our Thursday of fun.

3 large boneless skinless chicken breasts,
1/2 large vidalia onion
1/2 large red bell pepper
1/2 large green bell pepper
1 can water chesnuts, drained
handful bean sprouts, dreained
24 oz of mandarin oranges, drained (keep the juice)
package of mushrooms, fresh
cashews to taste
Honey Teryaki sauce

I cooked the chicken, with a little bit of extra virgin olive oil in my wok first, just to make sure it was cooked through, then added in the sauce to cover, simmered that for awhile to make sure the chicken retained the flavor, let the sauce cook down a bit.

I should note that I have no times on any of this, it was just "Oh that looks done now and ready".

Then I added the pepper, onion, chestnuts, cashews and beansprouts to the mix, stirring to get them all coated and added some more sauce to it.

In a separate sauce pan I added the mushrooms with a bit of the sauce and some of the mandarin juice, cooking it till the sauce simmered and then till the mushrooms were cooked through and soft then removed from heat. It only took a few minutes to complete that.

I covered the chicken and vegetables and let them cook on medium-medium/high, stirring only occassionally to check the consistency and make sure it didn't burn.

Started some rice. I used Minute Rice since my kitchen is small and I wanted the meal done fast. Just white rice.

I did egg rolls (store bought) and crab rangoons (also store bought, but I do plan on making my own next time) in the oven while everything was cooking.

When the onions were almost completely transparent I added the oranges and mixed it all up, let it go to work mixing flavors, left it for another little while that way.

To serve, I just put the rice on the plate, spooned on the chicken and veggies, added a little extra sauce from the wok and added chopsticks.

It was very very good. I delicious concoction. I was so pleased with it!

Money is really tight until the end of the week. Hoping I still have a few things to scrounge together a meal for the weekend before we get paid. I think since I can't really afford to go out and do much this weekend, I will concentrate on getting the house clean and reorganized and see what I can do to make it all look pleasant. Everything needs vaccuumed and dusted and whatnot and the cats have been alone all weekend so they need some attention. It will be nice to have a clean house though.

I found a really amazing website today, called Cooks.com and it has so many very good recipes. I was looking for French or Italian loaf pizza ideas and I found so many more. I also think instead of ordering a pizza, or making one of the recipes I found, I might try my own ideas out, which were developed while reading all the delicious recipes I found on Cooks.com!

Christmas in a week! I'm very excited! I'm going to be baking chocolate bark for the first time, hopefully in time to give all of my extended family some. I'm going to do, if all works out, three varieties. I'll be doing white chocolate with cranberries and pecans, milk chocolate with almonds and blueberries and cashews (i think) and dark chocolate with sweetened raspberries and almonds.

It's going to be quite a production, but I hope they all turn out well!

I want to make some for:

The Steve Family (close and extended, need to get numbers)
Grandparents Rosenthal
Todd & Liz...

Will need to figure out all the numbers on that, and then calculate exactly how much I'll need... but I might have to stop at Trader Joe's or The Uncommon Market to get bulk of the dried berries and nuts. Other than that, I need a few baking sheets. Might buy three of my own, and borrow others from mom.

I'm excited!
