I haven't cooked in a long time, but today the Orbitals came so that Daye could do their hair with highlights and we couldn't decide what to eat, so I volunteered to find us a meal worthy of our Thursday of fun.
3 large boneless skinless chicken breasts,
1/2 large vidalia onion
1/2 large red bell pepper
1/2 large green bell pepper
1 can water chesnuts, drained
handful bean sprouts, dreained
24 oz of mandarin oranges, drained (keep the juice)
package of mushrooms, fresh
cashews to taste
Honey Teryaki sauce
I cooked the chicken, with a little bit of extra virgin olive oil in my wok first, just to make sure it was cooked through, then added in the sauce to cover, simmered that for awhile to make sure the chicken retained the flavor, let the sauce cook down a bit.
I should note that I have no times on any of this, it was just "Oh that looks done now and ready".
Then I added the pepper, onion, chestnuts, cashews and beansprouts to the mix, stirring to get them all coated and added some more sauce to it.
In a separate sauce pan I added the mushrooms with a bit of the sauce and some of the mandarin juice, cooking it till the sauce simmered and then till the mushrooms were cooked through and soft then removed from heat. It only took a few minutes to complete that.
I covered the chicken and vegetables and let them cook on medium-medium/high, stirring only occassionally to check the consistency and make sure it didn't burn.
Started some rice. I used Minute Rice since my kitchen is small and I wanted the meal done fast. Just white rice.
I did egg rolls (store bought) and crab rangoons (also store bought, but I do plan on making my own next time) in the oven while everything was cooking.
When the onions were almost completely transparent I added the oranges and mixed it all up, let it go to work mixing flavors, left it for another little while that way.
To serve, I just put the rice on the plate, spooned on the chicken and veggies, added a little extra sauce from the wok and added chopsticks.
It was very very good. I delicious concoction. I was so pleased with it!
